The Fossil Collection and Easy Peasy Chili

Its cold and gray here today and I've decided to take advantage of the cold and make chili today for Eric's day off...it's probably one of the last chili weather days for a while. Here's the delish recipe that I found in a magazine at the dentists office.

-2 tbsp. extra virgin olive oil
-1 lb. cooked turkey sausage cut into 1 in. pieces (I use one package of Trader Joe's Mango Chicken Sausage)
-1 onion chopped
-4 garlic cloves minced
-15 oz can hominy drained
-1 cup green chili enchilada sauce (I use one jar of Trader Joe's green chile salsa verde)
-1/2 cup fresh cilantro chopped plus some for sprinkling on top
-2 cups peeled and cubed butternut squash

-Heat Sausage in pan with olive oil then add onion and garlic.
-Add hominy, enchilada sauce, cilantro and squash. Bring to a simmer, cover and reduce heat to medium low. Simmer until squash us tender. stirring occasionally...approx. 15-20 min.
-uncover and simmer to thicken if need be. sprinkle with cilantro and serve (I also add pieces of avocado).
and there you have it. An Easy Peasy Chili recipe.

I think this new collection is going to be called the Fossil Collection, because they look like little organisms and patterns frozen in time. Any thoughts on that name?
